Nothing says summer like lemonade- and our contributor Sarah from Offbeat + Inspired is totally kicking it up a notch with this Ginger + Honey Sparkling Lemonade recipe!  I am SO trying this out for our Memorial Day party later this month!

Hey Guys! I’m glad to be back here on East Coast Creative sharing another recipe with all of you!

I used to think I didn’t really like lemonade – until I made it last summer for the first time with actual lemons. Now, I’m completely hooked. There’s something about a cold glass of homemade lemonade on a hot day that just can’t be beat. While it may take a a few more minutes to whip up the real stuff, there’s simply no substitute for the crisp, tart and sweet flavor you get from fresh lemons.

This ginger and honey infused recipe yields enough to share with friends and family, but you can easily make the lemonade base and store it in the refrigerator. When the craving hits, just pour a bit of the lemonade base in a glass filled with ice, add seltzer and enjoy! Add herbs like basil or mint, fresh fruit or alcohol such as rum or vodka to create endless variations!

Ginger + Honey Sparkling Lemonade
Yields about 8 servings

2 ½ cups freshly squeezed lemon juice
1 ½ cups sugar
¼ cup honey
1 tbsp minced, peeled fresh ginger
6-8 cups seltzer water*
Ice

1. Add lemon juice, sugar, honey and ginger to a small saucepan. Turn on medium-high heat until sugar is dissolved and it comes to a simmer. Turn heat to low and heat for another 4-5 minutes. Remove from heat and allow mixture to cool.

2. Strain the mixture to remove the pieces of ginger. (If you prefer, you can skip this step so the ginger continues to infuse flavor in the lemonade.) Transfer lemonade base to a pitcher or individual glasses filled with ice and top with seltzer. Stir gently. Enjoy!

*You can adjust the amount of seltzer to make the lemonade the strength you prefer. I usually prefer a bit more seltzer, but adjust it to your taste. You can also use regular water for a great tasting, non-carbonated lemonade.
