This Fab Find is kind of silly, but is truly knock-your-socks-off delicious.
Many of you grow your own veggies and may be looking for something to do with all those ripe tomatoes and cucumbers, or many of you, like me, may hit up your local roadside stand to help them get rid of all those ripe tomatoes and cucumbers. This recipe from my mother-in-law is so simple, but I managed to cut and eat 5 tomatoes and 3 big cucumbers in 2 days because of it. Are you ready? Here it is:
Just add enough blush wine vinaigrette (I used Brianna’s which is to die for, but any blush wine vinaigrette will do) to cover the veggies and let marinate a few hours in the fridge. And voila! A refreshing, delicious salad to enjoy on these last few summer evenings….or afternoons. Probably most of you won’t eat it in the morning like I did. Enjoy!
