hey there! I'm monica

I pride myself on making amazing style and design accessible for everyone, regardless of location, budget, or ability! My design philosophy is rooted in authenticity + attainability - If I can do it, you can too! My work has been featured in countless publications, but I take the most pride in homeowners that have been personally inspired by my DIY ideas and have tried something in their own homes!

This is a Sponsored post written by me on behalf of Wonder bread for SocialSpark. All opinions are 100% mine.

My kids aren’t overly picky eaters (my younger daughter loves hummus, dried mango and all kinds of crazy stuff), but they are bread snobs.  They don’t want what they refer to as “bird food” in their bread (aka seeds, grain etc).  As their mom, I want them eating what’s healthy and something that tastes good, so they won’t be doing the lunch hour sandwich trade at school.
I was given the opportunity to try Wonderbread’s new Smartwhite for Kids and was challenged to make an awesome sandwich my kiddos would love.  I was thrilled to learn that Wonder Smart White has no high fructose corn syrup and the same fiber as 100% whole wheat bread.

No matter what’s in our sandwiches, one thing is a must- we have to use the circle cutter! My kids actually call their sandwiches “Circle Sandwiches”… “Mom, can you make me a pb&j circle sandwich? is what I hear just about every day.  The circle also makes my school-aged kids pretty popular in the lunchroom!
Sandwich
The real-deal honest, secret ingredient to school lunches is my HUBS! My amazing husband actually is the one to make the lunches in our house.  Two nights ago, I actually surprised him by making them, but the kids came off the bus and the first thing they said was, “Who made lunches?”  Busted!!  Since Eric makes the sandwiches, I asked him about his his secret Wonder Smart White recipe- it’s totally kid tested and approved!
Daddy’s Secret Recipe to the Perfect Sandwich
Ingredients:
Wonder Smart White bread
Peanut Butter (we use Skippy)
Squeeze Jelly
Eric told me the most important secret is to apply peanut butter to both sides of the bread.  You might remember that I’ve shared before how we make our sandwiches once a month, and the double-sided peanut butter keeps the jelly from leaking through.
Pbutter
The second secret is the tool he uses to make “circle sandwiches”  We love the Pampered Chef Press and Seal.

I’m so thrilled to have been introduced to Wonder Smart White- I no longer have to worry about getting the stink eye from moms seeing my kids’ white bread.  I know it’s good for them and they love the taste!

How do you keep packed lunches fun for your kids?
I’m so thankful for an amazing husband that has the world’s best PB&J recipe- at least my kids think so!

I have to ask. Who eats the rest of the sandwiches then? I count at least 20 sandwiches in that pile and that is a lot of left over sandwich for each little crustless circle!

I keep 3 different bins in the kitchen dedicated to lunches. One in the refrigerator holds all of our sandwich making supplies, and things like string cheese, yogurt, and cottage cheese. I don’t have to dig around the fridge every night, and can just pull out the plastic bin. Two more are kept in the cabinet for holding snack supplies like veggie straws, wheat thin sticks, teddy grahams, etc. The other holds fruit and applesauce cups and raisins. Makes lunch making simple! What a fun giveaway. 🙂

I try to make different sandwiches throughout the week. I also use blunt toothpicks to skewer fruit and make dips for them to use. And I always write them a little note of encouragement to brighten their day.

We make a lot of quesadillas and we use a lot of crackers. Oops! I don’t think I should have admitted that last part!

I don’t pack lunches anymore but I used to pack mystery items in his lunches. I wouldn’t pack something every day but I would buy fun items and keep my stash hidden and sneak them into his lunch. Like special drinks, crackers, chips, cut up the carrots in an unique way, or cookies. Sometimes I would cut his sandwiches into circles, triangles or just strange shapes like a puzzle. Sometimes I would make faces on his baggies that his sandwiches were on, something goofy that would make his laugh. Just stuff to mix it up.

I like to leave fun notes on her napkin, she loves it so much when i forget to do it she is so disappointed.

This is my first year packing lunches so I’m testing things out. We have a checklist that she gets to pick one option a day. We try to get creative with the Thermos and she likes to help with the process. Thanks for reminding me of the PC sandwich maker (brings me back to our PC days, Mon:) I save the crusts in a bag in the freezer and when i’ve accumulated enough i make a breakfast casserole out of them (you just put the pb & J so it just covers where the circle goes).

That sandwich looks delicious! I like to change things up by making food fun! I like to make peanut butter and honey roll up sandwhiches. When you cut the sandwich it looks like sushi!

Sometimes I’ll surprise the kids with something crazy like a giant pickle, or I’ll draw & write all over the peel of their banana!
